How to Make Coconut Rice

Here is a basic recipe for the perfect coconut jasmine rice. Not only is it super easy to make, but it's: versatile, multi-purposeful, satisfying, and tasty!

Servings 4 servings of approx ¾ cups (cooked rice)

Ingredients

  • 1 cup jasmine rice
  • ¾ cup water
  • ¾ cup canned unsweetened coconut milk use full fat or light
  • 1 teaspoon coconut oil
  • ½ teaspoon salt

Instructions

  • Rinse and drain rice in cold water
  • Melt coconut oil in heated saucepan. Then, add in rice, coconut milk, and salt.
  • Place the pot over high heat, and bring to a boil.
  • Stir and reduce the heat to the lowest possible setting and cover pot tightly with the lid.
  • Continue cooking for 15 minutes.
  • Remove pot from heat and let stand for 10 additional minutes.
  • Taste and add more salt if desired. Fluff with fork and serve.

Notes

Tasty twists:
-Before, adding rice, coconut milk, and salt, add in ½ teaspoon of minced garlic with the coconut oil.
-Add fresh cilantro and lime juice.
-Add turmeric and curry powder.
-Top with sliced green onion
-Get creative.
