Ingredients
1cupjasmine rice
¾cupwater
¾cupcanned unsweetened coconut milkuse full fat or light
1 teaspooncoconut oil
½teaspoonsalt
Instructions
Rinse and drain rice in cold water
Melt coconut oil in heated saucepan. Then, add in rice, coconut milk, and salt.
Place the pot over high heat, and bring to a boil.
Stir and reduce the heat to the lowest possible setting and cover pot tightly with the lid.
Continue cooking for 15 minutes.
Remove pot from heat and let stand for 10 additional minutes.
Taste and add more salt if desired. Fluff with fork and serve.
Notes
Tasty twists:-Before, adding rice, coconut milk, and salt, add in ½ teaspoon of minced garlic with the coconut oil.-Add fresh cilantro and lime juice.-Add turmeric and curry powder.-Top with sliced green onion-Get creative.
