Easy Chickpea Veggie Burger

This Chickpea Veggie Burger will be the newest addition to your "favorites" list. It's packed with tons of flavor and serves as an excellent alternative to store-bought versions.

Ingredients

  • 1 can chickpeas rinsed, drained, and mashed
  • 1 cup quick oats use gluten free if needed
  • ½ red onion
  • 1 small zucchini grated
  • 3 tablespoons cilantro finely chopped
  • 3 tablespoons red wine vinegar
  • 1 tablespoon sriracha sauce
  • 2 tablespoons almond butter or peanut butter
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 2 teaspoons black pepper
  • ½ teaspoon sea salt
  • 2 tablespoons olive oil or avocado oil

Instructions

  • Drain and rinse chickpeas. Next place them in a bowl and mash them with a fork.
  • Add all other ingredients the bowl and mix well with hands
  • Form into 6-8 patties
  • In a heated and oiled skillet, add patties (careful not to overcrowd). Cook for 3-5 minutes (over medium heat) or until golden brown. Flip, and cook an addition 3-5 minutes on the other side.
  • Repeat until desired number of patties are cooked.
