Ingredients
1canchickpeasrinsed, drained, and mashed
1cupquick oatsuse gluten free if needed
½redonion
1smallzucchinigrated
3 tablespoonscilantrofinely chopped
3tablespoonsred wine vinegar
1 tablespoonsriracha sauce
2 tablespoonsalmond butteror peanut butter
1teaspoon cumin
1teaspoongarlic powder
2teaspoons black pepper
½teaspoonsea salt
2 tablespoonsolive oilor avocado oil
Instructions
Drain and rinse chickpeas. Next place them in a bowl and mash them with a fork.
Add all other ingredients the bowl and mix well with hands
Form into 6-8 patties
In a heated and oiled skillet, add patties (careful not to overcrowd). Cook for 3-5 minutes (over medium heat) or until golden brown.
Flip, and cook an addition 3-5 minutes on the other side.
Repeat until desired number of patties are cooked.
