Creamy Tropical Cucumber Smoothie

The tropical flavors of pineapple, coconut, and banana, the bright citrus notes of lime, complimented with cool, refreshing notes of cucumber. Add greens and this tropical cucumber smoothie makes the perfect breakfast or post-workout snack!

I find myself going in and out of smoothie phases.  It’s like…for two week, I’d indulge decadent and creamy smoothies like my banana walnut bread smoothie or purple velvet smoothie, then, for one week, I’d move to green and refreshing.  Then comes a smoothie hiatus for about a week or two, then I’m back on the wagon.

As I’ve mentioned in my About page,  I eat intuitively.  I sort of just go for what floats my body’s boat nutrient wise. Hence this green refreshing, tart, sweet, naturally detoxifying, delicious cucumber smoothie concoction I’m sharing with you all 🙂  I’ve made tropical smoothies in the past, but adding cucumber gave this smoothie an even healthier kick! Let’s take a look at some nutritional benefits of cucumber shall we!?

Health Benefits of Cucumber

-naturally detoxifying

-high in Vitamins A, B, and C

-have anti-inflammatory, antioxidant, and anti-cancer effects

-great for hair (thanks to silica which encourages strength and shine properties)

-excellent for calming burned skin (apply sliced cucumber to sooth and calm affected area)

-helps revive puffy, dark under-eyes (apply fresh cucumber slices to eyes)

So, whether you’re applying cucumber to your skin or consuming it, cucumber benefits are aah-may-zing!

Creamy Tropical Cucumber Smoothie

The tropical flavors of pineapple, coconut, and banana, the bright citrus notes of lime, complimented with cool, refreshing notes of cucumber. Add greens and this smoothie makes the perfect breakfast or post-workout snack!

Total Time 5 minutes minutes
Servings 1 large smoothie or 2 medium sized servings

Ingredients

  • 1 heaping cup cubed pineapple (if frozen, omit ice)
  • ½ cup sliced cucumber (organic and skin/organic if possible)
  • 1 medium frozen banana
  • ½ cup coconut milk for creamier smoothie, use canned; for lighter smoothie, use coconut milk from carton, or use coconut water
  • ½ cup water
  • juice of one lime along with 1 teaspoon lime zest
  • 1 large handful spinach or kale (organic if possible)
  • 1 tablespoon chia seeds or hemp seed (optional)

Instructions

  • Add all ingredients to blender and blend on high until smooth and creamy, scrapping down sides as needed.
  • For thicker smoothie, add more ice. For creamier smoothie, add more coconut milk. For more intense green color, add more greens. For sweetness, add banana and/or pineapple. For more acidity, add more lime juice or zest.
  • Can keep refrigerated for up to 24 hours, though best served fresh.

Notes

For added protein, add 1-2 tablespoons of a neutral or vanilla flavored plant-based protein powder.  I like Vega Protein Powder(French Vanilla).
