Carob Banana Kamut Breakfast Pudding

Ingredients

  • 1 cup cooked Kamut
  • ½ banana
  • ½ cup plant based milk I used almond milk
  • 1-2 tablespoons carob chips
  • ¼ teaspoon cinnamon
  • ¾ tablespoon coconut nectar substitutes: maple syrup or agave nectar
  • 1 teaspoon chia seeds
  • ½ teaspoon maca root power
  • ¼ teaspoon vanilla extract
  • 1 pinch salt
  • 1 inch chopped piece of banana optional garnish
  • 1 sliced strawberry optional garnish

Instructions

  • Add banana, milk, maca root powder, salt, cinnamon, vanilla extract, and coconut nectar to a blender and blend until smooth.
  • Transfer mixture to a small saucepan and heat over low heat until it simmers.
  • Stir in cooked kamut then stir in chia seeds. Lower heat and continue cooking until mixture becomes thick and creamy.
  • Fold in carob chips.
  • Garnish with desired toppings and serve warm or cold. If serving cold, let your pudding cool down at room temperature then refrigerate until chilled.
