Ingredients
2steamed baby beetsor use fresh raw beets
½ cuplemon juiceI used meyer lemons
½cup cane sugaruse organic if possible
9 cupsspring water
Instructions
Blend together the beets and 4 cups of water.
If using raw beets: peel and grate then blend with water.
Pour mixture into pitcher.
Stir in the lemon juice and water. Taste and (if needed) adjust sugar and lemon to your desire tartness and sweetness.
Store in refrigerator and serve chilled.
