High-Protein Chickpea Burger

This Chickpea Burger will be the newest addition to your "favorites" list. It's packed with tons of flavor and serves as an excellent alternative to store-bought versions.

Ingredients

  • 1 can chickpeas rinsed, drained, and mashed
  • 1 cup quick oats use gluten free if needed
  • ½ red onion
  • 1 small zucchini grated
  • 3 tablespoons cilantro finely chopped
  • 3 tablespoons red wine vinegar
  • 1 tablespoon sriracha sauce
  • 2 tablespoons almond butter or peanut butter
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 2 teaspoons black pepper
  • ½ teaspoon sea salt
  • 2 tablespoons olive oil or avocado oil

Instructions

  • Drain and rinse chickpeas. Next place them in a bowl and mash them with a fork.
  • Add all other ingredients the bowl and mix well with hands
  • Form into 6-8 patties
  • In a heated and oiled skillet, add patties (careful not to overcrowd). Cook for 3-5 minutes (over medium heat) or until golden brown. Flip, and cook an addition 3-5 minutes on the other side.
  • Repeat until desired number of patties are cooked.
