Snacks, smoothies, soups, breakfast, lunch, dinner, and desserts. All of which are plant-based.
-I’m not vegan. What’s in it for me?
For starters, you definitely don’t have to be “vegan” to enjoy these recipes. The only requirement is that you need to be someone who enjoys delicious food. I whole-heartedly believe that everyone can benefit from incorporating more plants into their diet.
-Is there an easier way I can get the recipes?
Yes! Just go to the home page or contact page and enter your email in the space provided. It’s free! In fact, many people prefer getting updates sent straight to their inbox. This way, they don’t have to remember to keep checking back for new recipes and such.

Q & A
-Where are you from and where did you attend school?
I was raised in South Los Angeles and I attended Cal State University of Long Beach where I earned a B.S in Kinesiology (option in Fitness)
-What type of fitness field experience do you have?
I have lots of colorful experience in the fitness industry. Some of the roles I have taken on include: Group Fitness and Personal Training Manager, Biometric Health Screener, Biohacker Tech, Virtual Health Coach, and Nutrition Counselor.
-What do currently do for a living?
I am a Thai Massage Therapist, Personal Trainer, Group Fitness Instructor, and Nutrition Consultant.
-What type of workouts do you prefer?
I love a good weight lifting session. You, know…one where I’m dripping sweet sweat haha. I also mix in equipment such as sandbags, sleds, kettlebells, truck tires, battle ropes, etc. All in all, I love a good mentally and physically challenging workout.
In between gym sessions, I like to add in lots of walking, hiking, and sports like volleyball and kick-ball! I occasionally sign up and complete Spartan obstacle course races and bodybuilding (bikini) competitions. Yaaass!!
-What is your least favorite exercise?
Running. I’d prefer not to. My thighs rub. Enough said.
-What kind of background experience do you have with food and cooking?
I’m mostly a self-taught chef. Aside from holding past “Chef” positions at vegan and raw-vegan restaurants, 95% of my cooking skills have come from many years or practice and experimentation in my own kitchen. Oh, and I also credit faithfully watching the Food Network since I was 4 years old (does that count?).
-Why did you start That Green Lyfe (formerly Vegan Fit Carter)?
Well…I’m on a quest to help individuals achieve next-level energy, nourishment, & overall well-being. That Green Lyfe is kinda like a hub where people collect gems along their healthy living journey. This blog serves as one of my creative outlets that allows to express my love, passion, and obsession for overall wellness and longevity…oh…and health conscious tasty food!
-How long have you been eating a plant-based diet? Why?
Since 2014.
Initially, I thought it’d be pretty cool to put myself up to the challenge of creating plant-based meals to provide tasty alternatives to some of the meals I was eating before.
Today, I carry on with a whole food, plant-based diet simple because eating such a way helps me look, feel, and perform my best.
How do you approach your food each day? Do you have a specific “routine” you abide by?
Firstly, I’d like to point out that over the course of the first 2 years of my plant-based journey, I ate a lot of processed “meat” alternatives. Though they served me well as I transitioned to a plant-based diet, I essentially cut them down to a minimum and consume them on occasion.
When choosing foods/meals, I opt for minimally processed ingredients and whole-foods. I also prefer to eat at least one raw food meal each day (salads, mousses, mono fruit meals, smoothies, etc.)
As for a specific “routine”, I prefer to enjoy my meals within a 6 hour eating window and fast for 18-20 hours each day. A typical day might look like this:
12pm: protein shake or fresh green juice
2pm: mono-fruit meal
4pm: high protein/carb meal
6pm: A hefty salad with health fats added like nuts, seeds, avocado.
-What is your favorite fruit?
Thai Young Coconut
-What is your least favorite food?
Anything mint-chocolate flavored. Yuck!
-Explain your philosophy surrounding food and fitness.
During the consumption of my meals, I like to practice slow and mindful eating. Doing so not only helps me appreciate my food more, it also helps me have a more healthy relationship with food. Food shall not be consumed in a rush or “inhaled” because one can’t find time or discipline to slow down. It’s important for me to be respectful of the nutrients I put into my body. Slowing down to enjoy my meals allows me to the space to show gratitude to the nutrients and how they are serving me and–in turn–how they help me to graciously serve others.
With this slow, mindful approach, I tend to eat less and feel more full.
What are some of your favorite things?
Some of my favorite things include: Long, scenic hikes, grocery shopping, smushed-faced dogs, visiting beautiful beaches, road trips, obstacle course racing, gardening, DIY projects, game-nights with friends, crew-cut socks, crocs, daytime naps, and trying out new restaurants.
