I’ve got the perfect coconut rice recipe for you all! This basic recipe is versatile, multi-purposeful, satisfying, and easy to make.
For some people, rice is one of those “Hit or miss” types of things. One day you’re proud of your batch of rice. Another day, you added a tad bit too much liquid and your rice turned out mushy because you were experimenting. Then there was that one time where you to ran to the back of the house to grab something only to come back 2 minutes later and the whole bottom of the pot is burned. Yeah, I’ve bene there too!
This is an ode to the folks out there who will never give up on making a perfect batch of rice–not just any rice–the perfect coconut rice!
Here are some helpful tips for cooking the perfect rice:
-When cooking rice, you typically want to use a rice to liquid ratio of about 1:1.5 or 1:2. For this recipe, I used 1 cup of rice, ¾ cup of water, and ¾ cup of coconut milk (1:1.5). My rice came out just right!
-No high temperatures! Bring your rice to a boil, then lower the heat to the lowest possible setting. If you cook your rice too quickly, the water will evaporate and the rice will be undercooked.
-Stirring your rice too much during the cooking process activates the starch and will make it gummy. This is what give risotto its creamy texture.
-If using brown rice or any darker colored rice such as the black rice I used in this Red Lentil Curry and Spiced Eggplant recipe, use ¼-1/2 cup more cooking liquid than you would for white rice.
-Let your rice steam. Keep it covered for about 10 minutes after it’s done cooking, then fluff it with a fork.
Is your rice still not up to your standards?
If you still have trouble getting rice to come out perfectly on the stove or just simply want more convenience, then invest in a rice cooker. They’re practically fool proof–just plug it up and turn it on. I use mine every time I make rice. (By the way, this coconut rice pairs nicely with my Red Red Stew (Spicy Ghanian Black-Eyed Peas) recipe!) 🙂

How to Make Coconut Rice
Ingredients
- 1 cup jasmine rice
- ¾ cup water
- ¾ cup canned unsweetened coconut milk use full fat or light
- 1 teaspoon coconut oil
- ½ teaspoon salt
Instructions
- Rinse and drain rice in cold water
- Melt coconut oil in heated saucepan. Then, add in rice, coconut milk, and salt.
- Place the pot over high heat, and bring to a boil.
- Stir and reduce the heat to the lowest possible setting and cover pot tightly with the lid.
- Continue cooking for 15 minutes.
- Remove pot from heat and let stand for 10 additional minutes.
- Taste and add more salt if desired. Fluff with fork and serve.
