Ok we love chia seed pudding? Yes? But, it’s nice to change it up once in a while.
I wanted to experiment with using a different type of grain–one that I normally do not cook with. So, I checked my pantry and found a half of a bag of kamut.

What is Kamut?
Also known as Khorosan wheat is is the “ancient grain” category.
Ancient grains are a group of grains and pseudocereals (seeds that are consumed like grains) that have remained mostly unchanged for thousands of years.
They’re dietary staples in many parts of the world, such as China, India, Africa, and the Middle East. Today, ancient grains are becoming more popular in Western countries.
That’s because they tend to be less processed and pack more vitamins, minerals, and fiber than more widespread grains like corn, rice, and modern wheat.

How to Store Kamut?
Kamut is best stored in a sealed container in a cool, dark location. You can keep Kamut fresh for longer by storing it in the fridge. However, be aware that the grain is absorptive and may soak up excess moisture or smells unless it is sealed in a fully airtight container.
Ok, back to the recipe…
I am absolutely in love with eh texture of this Carob Banana Kamut pudding! It’s chewy–like chewier than overnight rolled oats and rice pudding combined! I added maca root as an extra pick-me-up to get your day started. The coconut nectar and banana gives it a unique sweetness. Chia seeds make things extra creamy, and the carob chips give the pudding an enjoyable chocolate-y goodness that just brings everything together.
Serve warm (like I did) or cold.

Recipe
Carob Banana Kamut Breakfast Pudding
Ingredients
- 1 cup cooked Kamut
- ½ banana
- ½ cup plant based milk I used almond milk
- 1-2 tablespoons carob chips
- ¼ teaspoon cinnamon
- ¾ tablespoon coconut nectar substitutes: maple syrup or agave nectar
- 1 teaspoon chia seeds
- ½ teaspoon maca root power
- ¼ teaspoon vanilla extract
- 1 pinch salt
- 1 inch chopped piece of banana optional garnish
- 1 sliced strawberry optional garnish
Instructions
- Add banana, milk, maca root powder, salt, cinnamon, vanilla extract, and coconut nectar to a blender and blend until smooth.
- Transfer mixture to a small saucepan and heat over low heat until it simmers.
- Stir in cooked kamut then stir in chia seeds. Lower heat and continue cooking until mixture becomes thick and creamy.
- Fold in carob chips.
- Garnish with desired toppings and serve warm or cold. If serving cold, let your pudding cool down at room temperature then refrigerate until chilled.
