This recipe is suitable for any time of year, no special occasion necessary.

It was inspired by my Simple Tofu Pad Thai recipe, and pairs well with this coconut rice.

Substitutions

If you know how to make the recipe fit a certain diet, let the reader know here. Don’t fake it – only provide guidance on topics you have actual experience with.

  • No peanut butter on hand? You can use almond butter, instead.
  • Make it utensil-free. Remove the broccoli from menu and place the “sauced” tofu inside of lettuce cups. Eat as is.
  • Not vegan or vegetarian and don’t want tofu? Opt for chicken or shrimp, instead.

I substituted the honey with erythritol to keep it keto and vegan and it was excellent! No specific measurement, just add to desired sweetness.
