Behold…Beet Lemonade! This vibrant pink, nutritious twist on the classic lemonade will be your new go-to drink for the summer. It’s got the perfect balance of sweet, earthy, and tart!
The first time I tried Beet Lemonade was a few months ago at the popular vegan restaurant, Stuff I Eat, located in Inglewood, California. After my first sip, I remember thinking to myself “Wow, that tastes familiar!” I still couldn’t put my finger on the taste.
After taking a few stabs at the mysterious flavor lingering in my mouth, my friend let the cat out of the bag. Beet Lemonade!? Who would have thought to put beets in lemonade?! Upon getting over the initial shock, I settled in with the fact that it’s pure genius. Then I thought, “Why didn’t I think of this before?!”
I mean, it’s such the foodie thing to do. The natural sugars in the beets totally compliments the tart flavor of the lemons.
Now here’s the thing, I used steamed(organic) beets. You know, the ones that come in the vacuum pack like this?
I typically buy fresh beets but these are the only beets I had in the fridge around the time of my beet lemonade craving. Hey, the good thing about using steamed beets is that there is not grating involved–meaning clean-up is so much easier. Yess!
I threw 1 steamed beet in the blender with a few cups of water.
The I dumped this mixture into my glass container and stirred in the remaining ingredients (lemon, and sugar).
According to friends and family, I tend to not use way less sugar than what others typically use. My version of “too sweet” is “just right” for others. What I’m really trying to say is: despite the amount of sugar I suggested to use in the recipe, adjust to your desired sweetness 🙂

Beet Lemonade: A twist on a Classic Summer Drink
Ingredients
- 2 steamed baby beets or use fresh raw beets
- ½ cup lemon juice I used meyer lemons
- ½ cup cane sugar use organic if possible
- 9 cups spring water
Instructions
- Blend together the beets and 4 cups of water. If using raw beets: peel and grate then blend with water.
- Pour mixture into pitcher.
- Stir in the lemon juice and water. Taste and (if needed) adjust sugar and lemon to your desire tartness and sweetness. Store in refrigerator and serve chilled.
