It was inspired by my Simple Tofu Pad Thai recipe, and pairs well with this coconut rice.
Ingredients (Main)
- Firm tofu
- Peanut butter
- Soy sauce
- Honey
- Sesame oil
- Ginger

Simplified Instructions
Prep the tofu. Whip up the sauce. Steam the broccoli. Pan fry the tofu then add the sauce. Plate with the side of steamed broccoli and enjoy!

Low-Carb Tofu in Peanut Sauce
Ingredients
- 1 tablespoon coconut oil
- 2 + ¼ cups tender stem broccoli or 400 grams
- 350 grams firm tofu
For the sauce
- ¼ cup natural peanut butter
- 2 tablespoons tamari or soy sauce
- 2 tablespoons water
- 5 tablespoons honey
- 1 teaspoon sesame oil
- ½ teaspoon chili flakes
- 1 tablespoon ginger grated
Instructions
- Firstly, prepare the tofu. Drain all the water, and sandwich it between two paper towels and two plates. Place a heavy item like a can on the top plate. Press for at least 30 minutes.
- Cut the tofu into ½ inch (1.25 cm) cubes.
- Mix all the sauce ingredients and set aside. Steam or boil the tender stem broccoli until tender, set aside.
- In the meantime, heat the coconut oil in the pan over medium heat and cook the tofu for around 10-15 minutes, occasionally turning, until browned. Add in the prepared sauce and stir well. Remove from heat and serve with the cooked broccoli.

I substituted the honey with erythritol to keep it keto and vegan and it was excellent! No specific measurement, just add to desired sweetness.
