This Easy Chickpea Veggie Burger will be the newest addition to your “favorites” list. It’s packed with tons of flavor and serves as an excellent alternative to store-bought versions.
I have to admit, I too have gone to the store, hit the freezer aisle, and picked up some ready made vegan patties. At the beginning of my vegan journey, it was fun and exciting to head to the store to pick up meat substitutes and other plant-based items. I mean come on, they’re convenient, and some of them are pretty dang tasty. However, I knew I couldn’t turn to these options for long. Many of them–including some of my favorites at the time–are laden with refined oils and cancer causing preservatives like benzaoates, titantanium dioxide, and nitrates. In reality, all most food products need is sea salt or a citrus derived preservative like citric acid. They make for great natural preservatives. Overall, it’s best to avoid companies that choose to use cheap preservatives as opposed to safer, natural alternatives.
Now, behold…this chickpea veggie burger is the epitome of “whole-food, plant-based.” It’s tasty, fulfilling, and most likely, you have at least 90% of the ingredients already in your pantry!
I love the flavor profile of these burgers. The combination of the sriracha, almond butter, cilantro, and other spices are heavenly. And yes, I said almond butter…trust me…it just works. Another thing I love about these burger patties is how great they hold together in the cooking process. I’ve experimented with a few different recipes in the past they all fell into the mediocre category in terms of texture and ability to stand up to the cooking process.
I give thanks to the instant oats, shredded zucchini and 98% mashed chickpeas, for their hearty texture. The red onion not only adds to the flavor, but gives a nice pop of color don’t cha think?
After mashing the chickpeas and hand mixing all of the ingredients, I was able to form 6 patties. Place them onto the barbeque or lightly oiled (hot) skillet, and cook until both side are golden brown.
Watching your carbs or prefer not to have bread? Use one of these patties to jazz up your favorite salad! In the picture below, I constructed a burger using one chickpea veggie burger patty, vegan mayo, avocado, tomato, and greens, in between 2 slices of organic, whole grain bread.
Recipe
Easy Chickpea Veggie Burger
Ingredients
- 1 can chickpeas rinsed, drained, and mashed
- 1 cup quick oats use gluten free if needed
- ½ red onion
- 1 small zucchini grated
- 3 tablespoons cilantro finely chopped
- 3 tablespoons red wine vinegar
- 1 tablespoon sriracha sauce
- 2 tablespoons almond butter or peanut butter
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 2 teaspoons black pepper
- ½ teaspoon sea salt
- 2 tablespoons olive oil or avocado oil
Instructions
- Drain and rinse chickpeas. Next place them in a bowl and mash them with a fork.
- Add all other ingredients the bowl and mix well with hands
- Form into 6-8 patties
- In a heated and oiled skillet, add patties (careful not to overcrowd). Cook for 3-5 minutes (over medium heat) or until golden brown. Flip, and cook an addition 3-5 minutes on the other side.
- Repeat until desired number of patties are cooked.
