This Peanut Butter Acai Bowl is loaded with mixed berries, bananas, and other healthy treats. Not only is this bowl fun to eat, but it’s sure to give you long lasting energy to jumpstart your day!

Now, I have to admit that I’m a little late hopping on the acai bowl train. I used to roll my eyes every time I seen pictures or heard people talking about them. Well, I finally caved in to see what all the fuss was about.
Something that I love about this peanut butter acai bowl is that it’s so fun to eat. With every spoonful, I get to sort of pick and choose what I feel like tasting in that moment… Hmm, I’ll have some of the peanut butter, banana, and cocao nibs with this bite. Or maybe I’ll scoop up some of the strawberries, and crumble for the next bite. See what I mean?! 🙂
Instead of the usual granola, I experimented with some homemade crumble that featured: oatmeal, mixed nuts, and other spices. If you feel like making your own crumble, be my guest–if not–feel free to use pre-made granola instead.
So what’s so magical about acai berries?
Acai berries have a ton of health benefits. Native to South America, acai berries have powerful blend of antioxidants including vitamins A & C, as well as minerals and amino acids. They also have Omega-3 essential fatty acids which are great for mental and visual function. Highly favored amongst athletes and the health conscious, the dark color of acai berries comes from pigments called anthocyanins which may contribute to immune defense.

Loaded Peanut Butter Acai Bowl
Ingredients
Acai smoothie blend
- 1 packet frozen acai berry puree (unsweetened)
- ¾ cup frozen berries of choice I used frozen mix of blackberries, strawberries, and blueberries
- ½ fresh or frozen banana (optional)
- 1 tablespoon peanut peanut butter or use almond butter
- 1 pinch cinnamon use pumpkin spice if desired
- ½ cup non-dairy milk I used cashew milk
- 1 teaspoon agave nectar optional
Oat-Nut Crumble
- ¼ cup dry oats gluten-free
- ¼ cup walnuts or use almonds
- ¼ teaspoon cinnamon
- 1 teaspoon coconut oil
- 1 teaspoon vegan butter OPTIONAL; OMIT IF DESIRED
- 1 pinch salt OMIT if using vegan butter
Garnish (optional ingredients--use your own combo if desired)
- cocao nibs
- sliced banana
- sliced fresh strawberries
- cinnamon
- agave nectar
- peanut butter
Instructions
- Smear a layer of peanut or almond butter around the sides of a bowl. Set aside.
- Next, blend all "Acai Smoothie Blend" ingredients together. You want the result to be thick. If ingredients are not blending completely because of smoothie "thickness", add a small amount and blend until smooth, thick and creamy.
- Add smoothie blend to peanut butter-smeared bowl and set aside in freezer.
- Now, (after rinsing blender cup clean) add all oat-nut crumble ingredients to blender and pulse until it looks like moist chunky granola.
- Finally, complete the construction for your Peanut Butter Acai Bowl! Scoop oat-crumble on top of smoothie blend (save some for the garnish). Arrange sliced banana, strawberries and/or other desired fruits and top with optional cocao nibs, the rest of the oat-nut crumble, a small dollop of peanut butter, a sprinkle of cinnamon, and a drizzle of agave.
