Juneteenth marks our country’s second Independence day, signifying the final emancipation of those enslaved in the US announced in 1865. This year, we are celebrating “Freedom Day” by offering a delightful selection of mains, sides, desserts, and refreshing drinks that are perfect for backyard barbecues and summer gatherings with friends and family. Join us in honoring the legacy of progress and freedom by cooking and sharing these recipes. What is Juneteenth
Juneteenth (a merge of the words/date June Nineteenth) marks the date in 1865 that the last enslaved people learned of their freedom. More generally, Juneteenth is the emancipation of enslaved African Americans throughout the former Confederate States of America , outside Native American lands.
For over 150 years since, Black American families, home-cooks, chefs, and culinarians have commemorated the summer holiday with a myriad of food traditions that tell a story of the perseverance of a people.
To Celebrate, I’ve whipped up a summery strawberry mango salad featuring other colorful goodies. I’ll also be sharing a list of other delicious, flavorful vegan and vegetarian dishes that can be found below!
Here Are the Main Components
- Romaine Lettuce
- Cherry Tomatoes
- Fresh Strawberries
- Red Onion
- Persian Cucumber
- Avocado
- Mango (I used a ripe ataulfo mango)
- Homemade Raspberry Vinaigrette
Making the Raspberry Vinaigrette
Blend the following ingredients together: fresh raspberries, basil, olive oil, honey, apple cider vinegar, salt and pepper.
It literally takes under 30 seconds!
Once you make this salad dressings at home, you’ll never want to buy the store-bought version dressings again. Just store in a mason jar or other glass container and use within 2 weeks.
Don’t have strawberries or mangoes? Switch ’em out for blueberries and or green apples 😉

Recipe
Strawberry Mango Romaine Salad w/ Raspberry Vinaigrette
Equipment
- ¼ cup filtered water
Ingredients
Raspberry Vinaigrette
- ¾ cup extra virgin olive oil
- ¼ cup apple cider vinegar
- 1 teaspoon sea salt
- 2 tablespoons honey
- 2-3 fresh basil leaves or 2-3 fresh basil leaves
- ½ cup fresh or frozen red raspberries
- ¼ cup filtered water
Salad
- romaine lettuce
- 1 ripe mango I used an ataulfo mango
- fresh strawberries
- red onion (thinly sliced)
- cherry tomatoes
- cucumber I used persian cucumbers
Instructions
For the dressing
- Place all ingredients in a blender and blend until desired consistency is reached.
- Store extra dressing in the refrigerator for up to 2 weeks.
For the salad
- Chop all ingredients.
- Arrange ingredients in a bowl or large plate.
- Drizzle on the dressing.
- Enjoy!
